I usually just take the average for a creatures hit dice (1d10=5.5, 2d10=11, round up for low OB monsters and down for high OB). Stat spread is distributed between Strength, Willpower, and Dexterity however the GM sees fit, though priority should be given to stats that suit a monster's attack style or special abilities.
